  • 900 g apples
  • 600 ml water
  • 700 g sugar (approximately)
  • 1 sprig dried thyme per jar

Instructions

  1. Wash the apples thoroughly, removing any bruises. Cut into 1.5" – 2" chunks without peeling or coring.
  2. In a large pan, combine the apple chunks with 600 ml of water and cook over low heat until softened.
  3. Transfer the mixture into a jelly bag placed over a bowl to extract clear juice. Do not squeeze the jelly bag.
  4. Optional: Use a potato masher to break down any remaining apple pieces for additional juice extraction.
  5. Measure the collected juice and add three-quarters of its volume in sugar along with one sprig of thyme in a large pot.
  6. Heat slowly to dissolve sugar while sterilizing jars in an oven. Remove thyme after dissolving, then increase heat until reaching setting point.
  7. Allow the mixture to cool slightly before pouring into warm sterilized jars, placing a sprig of thyme in each jar before sealing.
