  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse quinoa under cold water. In a pot, combine with vegetable broth and bring to a boil. Reduce heat to low, cover, and cook until fluffy.
